It’s been a week since we roasted our bacon, and I can’t count the times we’ve used it. It was roasted the night before the Super Bowl, so we had to use it a couple of time that day.
First preparation was a simple, classic breakfast.
Next up was Michael Symon’s Pork Cheek Chili for the big game (Go Packers!). We substituted pork shoulder for the cheeks, but it was mighty tasty. Someone commented it was the best use of black-eyed-peas all day. 🙂
This wonderful bacon has also appeared in various scrambles, including my dad’s famous Oysters and Eggs and a fantastic quiche lorraine. Needless to say this has been special. We have some left in the freezer, but we bought another belly yesterday. I’ll decide tonight whether it is gonna be more bacon or pancetta. Stay tuned.
